To 'all-inclusive' or not--that is the question.

We are looking to get away for about 2 weeks at the end of the month for our honeymoon.
We aren't into big, loud parties or lots of drinking. We love nature, swimming, maybe some snorkelling. Gentle waters are ideal.
We want to avoid the super-duper, crazy tourist towns, yet would like to be in enough of a civilized location that we get fed well and have a nice cottage or hotel room.
We've taken advice on the forum last week stearing us toward cozumel, playa del carmen, valladolid, meridia, and tulum. However, after some research, I see that some of these locations look great, but I don't know if these 'all-inclusives' are worth it
